The boats carry not just grain, but the flavors of a thousand kitchens.

There was an old saying in Xihe town, "kao shui chi shui" which roughly translated to " near the water, rely on the water”. The town's proximity to the Yangtze River provides abundant aquatic resources such as fish and aquatic plants, which eventually become staples in the local diet.

Additionally, as a trading hub, Xihe welcomed trades from various regions and integrates the culinary style of the nearby region into its own.

The local explains the cooking method "liang ban" where vegtables are boiled first and mixed with a light dressing(similar to salad).
